Fresh from the forest into the jar – Herr Edelmann chanterelles fresh from the forest grow wild in forests under deciduous and coniferous trees on sandy soils, are picked by hand, selected and processed fresh. It is mainly mushrooms with small (up to 15 mm diameter) and medium-sized (up to 30 mm diameter) heads that end up in the jar with this product. With their dark yellow colour, typical for chanterelles, they not only look appetising, but also taste extremely good: firm, al-dente, fresh, wonderfully tasty. They can be processed in exactly the same way as fresh chanterelles, but regardless of the season – so you can enjoy chanterelles all year round. Whether it’s in mushroom sauces, omelettes, game dishes, pasta, slightly browned as a salad topping or as antipasti – they are versatile and tasty in any variety. CHANTERELLES

Eierschwammerl, Reherl, Pfifferlinge – in German, the Cantharellus cibarius, one of the most popular and tastiest edible mushrooms of all, has many names. The small orange-yellow mushroom lives in the forest in symbiosis with trees and cannot be cultivated. Therefore, our chanterelles are also wild grown and collected by hand. Only the smallest, finest mushrooms, with a hat size of no more than 1.5 millimetres, go into the jar. Al dente, preserved in a light brine and aromatic in taste, they can be used to prepare all chanterelle dishes, even outside the short season. They are used in the same way as fresh mushrooms. They taste great in sauces, in omelettes, in game dishes, with pasta, fried on salads or as antipasti. With hardly any carbohydrates, hardly any fat and plenty of protein, they are wonderfully suitable for a conscious diet. SHIITAKE
Shiitake has been a widespread edible mushroom for many centuries in East Asia. It has also been becoming increasingly known well in Europe for several years. The mushroom with a fine, very mushroomy flavour is cultivated on wood and is even used as a medicinal mushroom in traditional Chinese medicine. As a supplier of essential amino acids, which are otherwise mainly found in animal products, it enriches the vegetarian diet very well. It also contains almost no fat and no carbohydrates. For Herr Edelmann shiitake, we only use class A raw material with mostly closed heads and cap sizes up to 40 mm. Herr Edelmann shiitake are pre-cooked firm to the bite and are suitable for a whole range of different recipes with their intense flavour. They are just as good in Asian dishes as in pasta, omelettes, cream sauces or soups. Fried or sautéed, they are excellent as antipasti or a side dish. SHEATHED WOODTUFT
Chinese sheathed woodtuft, also called nameko, grow wild on the trunks of deciduous trees such as birch, oak or poplar and are also cultivated. For Herr Edelmann sheathed woodtuft, only class A mushrooms, with a high proportion of small and closed caps, end up in the jar. With their gold-coloured caps, they look appetising, their taste is mild, with a slightly nutty flavour. In traditional Chinese and Japanese medicine they are considered to be medicinal mushrooms. Pre-cooked and firm to the bite, Herr Edelmann Chinese sheathed woodtuft refine soups or wok dishes. But they also go well with classic mushroom recipes such as omelettes or cream sauces. PORCINI MUSHROOMS
Porcini mushrooms are one of the most popular edible mushrooms. Pleasantly nutty in flavour and with firm flesh, they are considered a classic in mushroom cuisine. They grow exclusively wild and are collected and sorted by hand. For Herr Edelmann porcini mushrooms, we only use selected small, whole heads with a diameter of two to four centimetres. The practical 212 ml portion jar is also ideal for single households. Pre-cooked al dente and pickled in a light brine, the porcini heads are easy and very versatile to use. The well-balanced mixture of shiitake mushrooms, Chinese sheathed woodtuft and selected small oyster mushrooms tastes good in stir-fry and WOK dishes as well as in sauces. Deliciously assorted and easy to use – shiitake mushrooms, Chinese sheathed woodtuft and selected small oyster mushrooms are pre-cooked until firm to the bite for the Herr Edelmann WOK mushrooms mix. Lightly salted but otherwise unseasoned, they can be used practically and in a variety of ways, enriching all kinds of WOK and pan-fried dishes. RACLETTE MUSHROOMS
Tender melting cheese that goes over aromatic mushrooms – the Raclette Mushrooms mix with shiitake, Chinese sheathed woodtuft and baby oyster mushrooms makes raclette recipes of all kinds quick and uncomplicated. The mushrooms are so small that they fit perfectly on the pans. They also remain whole and are not cut. We only use class A raw mushrooms that are pre-cooked to a firm bite and lightly salted. This means the mixture can be used straight from the jar. With the appropriate spices, the mixture is also suitable for further processing for a variety of other recipes, whether classic or Asian-style. In addition to raclettes, it can be used to enrich stir-fried dishes or – when hot – on salads or as antipasti.
